JAMBALA (BANANA CURRY SOUP)

... a somewhat different recipe idea from our adults only hotel Tyrol, the golf hotel Leutasch near Seefeld.

Preparation

Finely dice the onion, chop the bananas and melt the chocolate.

Fry the onion in a small pot with rapeseed oil. Once the onions turn translucent, add the bananas and fry briefly, then season with "Dehli Curry" and fry briefly again before pouring in the vegetable stock and bringing to a boil.

Then, add the milk, coconut milk, chocolate, season with ginger and sambal olek and let simmer for an hour.

Finally, mix and thicken with a little cornflour before topping off with coconut (a little milder) or with cayenne (a little hotter).

Serving suggestion

Fill the soup into 4 soup bowls and garnish with shavings of dark chocolate.

  • 1 onion
  • 2 overripe bananas
  • 750 ml vegetable stock
  • 200 ml milk
  • 1 tablespoon coconut milk
  • 50 g dark chocolate
  • 100 ml rapeseed oil
  • Spices, such as Dehli curry, ginger, sambal olek, coconut or cayenne
  • Cornstarch
