BEEF SCHNITZEL WITH SAGE AND ZUCCHINI PASTA

... a delicious recipe for a special main course from our adults only hotel Tyrol, the Golf Hotel Leutasch.

Beef schnitzel preparation:

Beat the veal cutlets and season with salt,
then cover with two sage leaves each
and fry in a pan with olive oil.
After frying, keep the cutlets warm in the oven at 90°C.

Sauce preparation:

Deglaze the mixture left over after frying the schnitzel with 250ml vegetable stock and stir, then keep warm.

Pasta preparation:


Cook the pasta with salt and olive oil until al dente (firm to the bite).
Meanwhile, cut the courgettes into thin strips with a vegetable peeler.
When the pasta is cooked, toss the pasta and courgettes in a preheated pan with olive oil.
