Beat the veal cutlets and season with salt,
then cover with two sage leaves each
and fry in a pan with olive oil.
After frying, keep the cutlets warm in the oven at 90°C.
Deglaze the mixture left over after frying the schnitzel with 250ml vegetable stock and stir, then keep warm.
Cook the pasta with salt and olive oil until al dente (firm to the bite).
Meanwhile, cut the courgettes into thin strips with a vegetable peeler.
When the pasta is cooked, toss the pasta and courgettes in a preheated pan with olive oil.
