PUMPKIN SEED SOUP

Head chef and hotel manager Sebastian from our adults only hotel Tyrol Leutasch likes to prepare a delicious pumpkin soup in autumn, which is also adapted to the needs of the “active” energy type.

PREPARATION:

Heat the olive oil slightly and sauté the onion a little... Add the pumpkin and potato cubes, pour in 500 ml of water, add the ginger, curry, salt and stock cubes and simmer the vegetables with the lid on for about 25 minutes.

In the meantime, prepare the croutons by heating some pumpkin seed oil in a pan, adding the cubes of brown bread and roasting them together with the garlic cloves over high heat.

Once the soup has cooled, puree it with a blender and heat it up again before serving. Serve the soup in a soup dish, drizzle with pumpkin seed oil and sprinkle with croutons.

INGREDIENTS
Soup ingredients:
  • 2 tbsp olive oil
  • 1 onion (chopped)
  • 500 g Hokkaido pumpkin (diced)
  • 2 potatoes (diced)
  • fresh ginger (approx. 5 cm, grated)
  • 1 tbsp curry powder, salt and stock cube
Ingredients for the pumpkin seed oil croutons:
  • 2 slices brown bread (diced)
  • 2 tablespoons pumpkin seed oil
  • 1 clove of garlic (pressed)
