PISTACHIO SOUFFLÉ WITH WARM SOUR CHERRIES

SOUFFLÉ PREPARATION:

Soak the white bread in milk and stir with butter, sugar and 2 egg yolks until fluffy.

Beat the three egg whites until stiff, fold the stiff mixture, pistachios and breadcrumbs into the fluffy mixture.

Pour into moulds and steam in a bain-marie at approx. 170 °C for 35 minutes.

SOUR CHERRIES PREPARATION:

Separate the cherries from the juice. Add some sugar to the cherry juice and bring to the boil. Then, bind with cornflour, add the cherries and bring to the boil again.

Whip the cream until stiff.

  • 50 g butter
  • 50 g sugar
  • 2 egg yolks
  • 3 egg whites
  • 50 g white chocolate
  • 1 piece of white bread with the crust removed
  • 100 ml milk
  • 50 g grated pistachios
  • 50 g breadcrumbs
SOUR CHERRIES INGREDIENTS
  • 1 jar sour cherries
  • 50 g sugar
  • 50 g cornstarch
  • 100 ml cream
