SMOKED SALMON TARTARE ON HASH BROWNS

Tartare preparation:

Finely chop the ingredients, mix with sour cream and spices and chill.

Hash browns preparation

Press e water out of the potatoes a little, mix with the yolk and the spices and shape into patties about the size of a hand. Fry in clarified butter over medium heat until golden brown on both sides.

Serving suggestion
Arrange some watercress on a plate, top with balsamic glaze and position the hash browns in the middle. Use a spoon to form the tartare into a quenelle, place on top of the hash browns and decorate with fresh dill.

  • 1 yolk
  • a little butter
  • salt, nutmeg and pepper
